The 1992 Cabernet Sauvignon won the prestigious Jimmy Watson Memori-al Trophy in 1993, showcasing Elderton’s ability to make great Cabernet.\u003c\/p\u003e\u003cp\u003e \u003c\/p\u003e\u003cp\u003eWith the dry season in 2025, we were sure to maintain canopy to protect our ripening fruit, which also helped to bring ripening forward ensuring we maintained freshness in fruit. Using gentle cap manage-ment and moderate temperature in ferment we allow our Cab to ferment to dryness whilst still on skins to take advantage of tannin extraction, a key element in building structure.
