There's something incredibly satisfying about opening a bottle of wine that's been patiently waiting for just the right occasion. Whether you're laying down a few bottles of Command Shiraz for a special anniversary or simply saving your favourite Cabernet Sauvignon for winter, storing wine correctly can make all the difference.

The good news? You don't need an underground cellar carved into limestone to age wine successfully. With a little care and attention, you can create the right conditions at home to help your wines develop beautifully over time.

Why Cellar Wine?

While many wines are made to be enjoyed soon after release, premium wines with good structure, acidity and tannins can evolve remarkably with age.

As wine matures, vibrant fruit flavours gradually give way to more savoury, earthy and complex characteristics. Tannins soften, aromas become more layered, and the wine develops a depth that simply can't be rushed.

Many of Elderton's flagship wines, including our Command Shiraz, Ashmead Cabernet Sauvignon and Helbig 1915 Shiraz, are crafted with longevity in mind and will continue to reward careful cellaring for many years.

Keep the Temperature Consistent

Temperature is the single most important factor in wine storage.

The ideal cellar temperature sits between 12°C and 15°C, with consistency being more important than the exact number. Frequent fluctuations cause the wine to expand and contract, potentially allowing unwanted air into the bottle and accelerating ageing.

Avoid storing wine in places that experience large temperature swings, such as garages, sheds or kitchens.

Protect Wine from Light

Sunlight and strong artificial light can damage wine over time by breaking down delicate compounds responsible for aroma and flavour.

Store bottles in a dark cupboard, wine cabinet or cellar wherever possible. If your collection is displayed, choose a location away from direct sunlight.

Store Bottles on Their Side

If your wine is sealed with a natural cork, store the bottle horizontally.

Keeping the cork in contact with the wine helps prevent it from drying out, maintaining a tight seal and protecting the wine from oxidation.

If your wine has a screw cap, orientation is less important, although storing bottles on their side is still a practical way to maximise storage space.

Minimise Vibration

Wine benefits from being left undisturbed.

Constant movement or vibration can interfere with the natural ageing process and prevent sediment from settling. Once you've found a home for your bottles, resist the temptation to move them around unnecessarily.

Humidity Matters

An ideal cellar has a humidity level of around 60–70%. This helps prevent corks from drying out while discouraging mould growth.

For most home collectors, maintaining the correct temperature is far more important than chasing the perfect humidity level.

Can I Cellar Wine Without a Wine Fridge?

Absolutely.

If you don't have a dedicated wine fridge, look for the coolest, darkest and most stable part of your home. An internal cupboard or insulated storage area away from heat sources often works surprisingly well for shorter-term cellaring.

For those planning to build a serious collection, a temperature-controlled wine cabinet is a worthwhile investment.

How Long Should I Cellar My Wine?

Every wine is different, and personal preference always plays a role.

Some people enjoy wines in their youthful, fruit-driven stage, while others prefer the complexity that comes with maturity.

As a general guide:

  • Fresh white wines: Best enjoyed within 2–5 years.
  • Premium Chardonnay: Often rewards 5–10 years of careful cellaring.
  • Barossa Shiraz: 10–20+ years, depending on the wine.
  • Cabernet Sauvignon: Commonly 10–20 years or more.
  • Icon wines such as Command Shiraz can continue evolving gracefully for several decades when stored correctly.

One of the joys of collecting wine is opening bottles along the way to discover how they evolve. If you purchase six or twelve bottles, consider enjoying one every few years to experience the journey.

Building Your Cellar

A great cellar doesn't need to be enormous. Start with wines you genuinely enjoy drinking and gradually build a collection that reflects your tastes.

Include a mix of wines ready to enjoy now alongside those destined for the future. Before long, you'll always have the perfect bottle waiting, whether it's for a family celebration, a quiet dinner or an unexpected reason to raise a glass.
