Production notes

Description

This back-vintage release has been carefully cellared and matured in our temperature-controlled Elderton Cellar. It represents a rare opportunity to experience a premium Barossa Cabernet Sauvignon with the perfect balance of developed bottle age and vibrant fruit character.

Winemaker Notes

The 2017 vintage was characterised by steady ripening of fruit across the Barossa. From our vineyards, we were able to capture great fresh flavours particular to each site, backed by tight, just-ripe tannins to balance the fruit. The hand-harvested fruit was fermented in open-top concrete fermenters with chilled ferments, hand pump-overs, and cap submerging with oak header boards for eight days. The process finished with barrel fermentation and malolactic fermentation in new French oak.

Aroma: Enticing aromas of cassis, dark chocolate, and bay leaf, complemented by secondary notes of cedar and cigar box from careful cellaring.

The cool growing season produced exceptionally good varietal expression; this has blackcurrant fruit with threads of mint, black olive and bay leaf flowing through it. It makes light work of 18 months' maturation in new French oak. Drink to 2037.
