Vintage release – 2015 Command Shiraz and 2016 Ashmead Cabernet Sauvignon

by Jess Ruciack

1 March is an exciting day on the Elderton calendar. It is annually on this date that we release the newest vintages of the Command Shiraz and Ashmead Cabernet Sauvignon!

Allister Ashmead, Co-Managing Director of Elderton, notes, “The team at Elderton always looks forward to 1 March, the date when the new vintages of our flagship wines are released to the world. Seeing the excitement of our fans, friends and family makes the years of hard work in producing these exceptional wines all very worthwhile. Even before anyone has tasted this year’s releases, many are already getting very excited as both 2015 for Shiraz and 2016 for Cabernet are being considered as outstanding vintages.”

In the winery the fruit from both single blocks is handled with care and attention, to ensure the resultant wine is remarkable. Open ferments with attention to colour, flavour and tannin management are all key, as is the beautiful new oak that is specially selected for these wines to rest in after fermentation.

2015 COMMAND SHIRAZ

Barossa Winery - Elderton Command Shiraz 2015

Command Shiraz is one of Australia’s best and most highly regarded icon wines. The single vineyard block was planted in 1894 and the Estate has grown around the gnarly old vines. The Command vines are now 125 years old and are considered an Ancestor block by the Barossa Old Vine Charter.

2016 ASHMEAD CABERNET SAUVIGNON

The Ashmead family almost pulled a low-yielding block of Cabernet Sauvignon in the late 90s, but instead decided to reward the vineyard for its decades of service and excellence, giving it a single vineyard designation. Cost and time became irrelevant in the pursuit of making the Barossa’s best Cabernet Sauvignon and the family believes this wine, the Ashmead Cabernet Sauvignon, is equal to any of the world’s best.

Allister has said, “One of the greatest pleasures we derive as family winemakers is to see the joy on people’s faces when they discover something unexpected. More often than not, this joy is often associated with tastings of our Ashmead Cabernet Sauvignon.”

Cabernet’s bursting swag of currant, dried sage and olive, at least as its voice in warmer climes, is all here in spades. What, though, makes this wine impressive, is its sheer strut across the palate. Buxom and confident, yet dichotomously restrained …
